I have a new job title: Not SAHM

I’m having one of those weeks where I have been eating the leftovers to prove a point. “It wasn’t that bad.” But it kinda was. I really need to go and “unpin” some of my recipe disasters.

Not consecutively, but I have had about four weeks off this summer from cooking. You would think I would be fresh with ideas. Instead it seems like I can’t remember what I use to cook that was good. So I have clicked quite a few meals in Pinterest and nothing I made tasted or looked as good as the picture. 

Last week I bought Christopher some of those pancakes that are individually wrapped so that he could “make his own breakfast”. Using the microwave on his own has worn off. This morning he said, “Mom I want something I can’t make. Like the usual.” ‘The usual’ is my school year Saturday breakfast. One Saturday I'll prepare grits, eggs and turkey bacon or sausage, the next Saturday it is french toast, pancakes or waffles, with eggs and a meat. His suggestion today was, “Grits, eggs and sausage.” I obliged. I do breakfast very well.

Breakfast turned out to be inedible. Both Papa Bear and Baby Bear mix their eggs and grits and the grits were too salty. Ooops, my bad. I heard Christopher say, “Don’t say it dad. I know what you’re thinking. You’re gonna hurt moms feelings.” Then Christopher asked, “Uh mom? Did you put sugar in these grits?” I already knew they were too salty. I thought by not adding salt to the eggs that they would be okay. Not. So I gave them permission to scrape their plates. My husband made a sandwich out of the sausage. Christopher’s stomach hurt.

I made a pound cake this week to make up for nothing else good on the menu. Today I felt like I owed them another treat. I found this recipe back in January (before I was on Pinterest). At the time I was looking for something to prepare for a Super Bowl party. This was a hit at home. I ended up making something else for the party.

Here's the thing... Christopher usually tries to spare my feelings. I know something is really bad when he starts off, “Uh mom? I didn’t want to hurt your feelings but....”

When it’s really good, I get a compliment like today, “You’re the best daycare mom ever!”

Tex-Mex Chili Bake(It’s fattening y’all)

1 pound of ground Turkey

1 packet of Tex-Mex Chili Seasoning

1 can of Black beans, drained

1 can of Mexicorn

1 can of Tomato Soup

1 4.5 ounce can of Chopped Green Chiles

2 cups of shredded cheese (1 cup Five cheese mix/one cup Mild cheddar)

Tortilla chips 

Jalapenos 

Sour Cream for topping

Preheat oven to 350. Cook the turkey and use the Tex-Mex chili packet as the seasoning. Add remaining ingredients and pour into a 9x12 baking dish. Spread the five cheese mix across the mixture. Top with about a cup of crushed Tortilla chips and top with the remaining cheese. Garnish with Jalapenos. Cook for about 25 minutes. Serve with more chips and top with sour cream.
