Belgian Waffles & South Carolina Moonshine

Well I finally got tired of my last post being my last post that looked like my last post, so here I am with a new one fresh off of writer's block.

While I was away, I changed my blog design for the 100th time. I wish I could paint and redecorate my office with a few strokes of html and css.

I digress...

So I made waffles this morning by way of a new kitchen gadget...

I already had a waffle iron but it broke just last week.

What had happened was, last weekend I was meeting daddy halfway for the Christopher exchange.

Mom had asked to borrow my waffle iron even though she had the same one. We have had twins of everything from Oxo's to red boots.

Anyway, she was helping out a friend and needed to make waffles double time. So I packed my waffle iron into a canvas shopping bag and put it in my trunk. When I met daddy, I handed him the bag and said, "This is for mom."

You know how you hand someone a bag with handles and they don't grab both handles? 

For one second I thought to say, "You don't have it" but it was too late. The waffle iron crashed to the concrete. He said, "It was heavy. Why didn't you tell me it was heavy?"

We thanked goodness no toes were harmed in the dropping of the waffle iron but I said, "Ooooooo I'm gonna tell mom! It wasn't my fault."

No sooner than I got on the highway headed home, I called mom to say that daddy dropped the waffle iron. 

Later that day we had a text talk about it...

I had to drive to South Carolina on Thursday for a graduation, so I was going to bring the waffle iron back home. 

In the meantime mom and I had talked on the phone about the new and improved waffle iron where you can make two at a time. She and I had both eyeballed it with gadget desire on my cousin's wedding registry, but neither one of us needed it.

I told her that I hated for her to give me her waffle iron. It's something we said we would always hold onto, whether we made waffles or not. It's a nice gadget to have around for waffle promises and company.

So I get home to mom and dad's house and she says, "We have a surprise for you!" I looked at the size of the box and tilted it to check it's weight. I instantly had hope for what was inside. 

I was too excited to break it in and promised Christopher that I would make waffles today! Of course I won't just leave you with a story and no recipe.

Mom's Pancakes (works for waffles)

  • 2 C self-rising flour 

  • 1 3/4 C buttermilk 

  • 2 eggs 

  • 1 T baking powder 

  • 4 T Crisco butter flavor shortening (melted)

  • 2 T sugar

  • 1 t vanilla flavor 

Directions:

Mix and let it rest for about 15 minutes, then prepare as you would for pancakes or by the waffle iron instructions.

Easy peasy. 

Unless you had South Carolina Peach Moonshine the night before and you were drunker at 3:00 am than you were when you went to bed. Then it might be queasy peasy not so easy. 

But I promised to make the waffles.
